Terrible Temperatures!

It was -8F this morning - unbelievable cold has swept into NM. Our Jotul WOODSTOVE is very efficient and keeps us toasty warm - even if the electricity goes out. Thankfully, our electric coop has done a good job so far...

We have the bird feeders filled and so far the animals and wildlife are surviving well. Nothing to do in the garden except read the catalogs and make decisions about varieties of seeds to add in 2013.

We do have seeds for sale from 2012 harvest. They are listed on our pages under Ebay.

Here in London it's been around zero for the past couple of weeks which is cold enough, but nothing like it is there!
I've been putting extra bird food out in the mornings, and like you been armchair gardening browsing the catalogues.

Favorite RECIPES

PINTO BEANS (this recipe works with most dry beans)

Makes 1 quart (my pressure cooker holds seven 1 quart jars)

Wash jars in dishwasher. Place rims and lids in pan of water and heat slowly on stove. Measure, rinse and drain 1 cup of beans for each quart you plan to process. Boil enough water to fill each jar you will process. Set out all ingredients. When jars are washed and still hot from dishwasher, place on dish towel. To each warm quart jar add the following:

1 C dry pinto beans
½ chopped shallot or small onion pieces
1 - ½ slice cooked or uncooked bacon (optional)
4-5 sprigs fresh cilantro
1 Jalapeno pepper with stem if possible
1/2 t salt

Fill jar to top with boiling water. Leave ½” head space. Thoroughly dry the rims and edge of each jar. Place lids and rims on jars and tighten. Pressure cook @ 15# pressure for 90 minutes. NOTE: pressure may need to be changed due to your elevation or location. We are located at 6500 ft.

ASPARAGUS FRITTERS

1 C Fresh asparagus, steamed slightly. Drain, cool and slice. Add 1 egg yolk, beaten until thick.

Sift together: 1/2 C + 2 T flour, 1/2 t baking powder; 1/2 t salt, dash of paprika.

Stir into asparagus. Fold in 1 egg white, beaten stiff.

Drop by spoonfuls onto non-stick skillet brushed lightly with olive oil. Cook like pancakes, until delicately browned.

Serve with lemon butter, fresh salsa, sour cream or cheese.
